This is a very simple guacamole, and perhaps more appropriately ‘spruced up avocado’. It’s a great way to add zip, zing and fat to meals, and you’ll have it whipped up in a jiffy. Add some chilli if you’d like an extra punch!
Guacamole
SERVES 4
2 avocados, approx. 300g flesh weight
1–2 limes juiced
1 tablespoon olive oil
2 tablespoons chopped coriander
salt
pepper
Ingredients
Roughly chop the avocado and add to a bowl with lime juice, olive oil, coriander, salt and pepper.
Stir to combine and adjust the seasoning depending on your taste—trust your instinct. Maybe it needs more acid from the lime, or more salt and pepper.
Serve with your favourite Mexican food like this chilli con carne, with cold meats and fish, or simply on its own!
